Clean Eating Jump Start

This idea has been thrown around at The Studio for quite some time now.  The original idea was that a group of us would get together at someone's house and we would meal prep together and share what we made.  Which is a fantastic idea except we would need a ridiculously large kitchen with a lot of counter space, stove tops and ovens so we just kinda put it to the side.

 

Well the idea came up again after the success of our last fitness challenge (which incorporated clean eating of course) and now we are making it happen with one small change...each of us will prepare a large meal at our own homes and then we will portion it out for the group.  I know...not as fun as a group of us hanging out (maybe drinking wine) at someone's house while we do it but this really does make more sense. 

 

So this weekend, 16 of us will be making large healthy meals to portion out into single servings for our group of 8.  It's gotta be clean.  What does that mean?  Lean meats, fish, veggies, beans...no or very little processed ingredients. And I can honestly say I'm pretty excited with the dishes our participants are coming up with.   Here's a few of them:  zucchini noodles with chicken sausage & pesto (yum!), buffalo chicken lettuce wraps (yes!), shrimp tostadas (mouth watering right now) and quinoa stuffed peppers (can I get an amen?!).  

 

I am really looking forward to jump starting my clean eating (again) by having 8 healthy meals in my fridge on Monday.  Next week is sure to be a nutritional success when all I have to do is open the fridge, pick a meal and heat it up.  Because we all know meal prep for the week is critical if you want to stay on the right track with clean eating.  A lesson I have to relearn too often! 

 

For those of you who are interested in how this turns out, I will post in the comments below about some of my favorite meals along with the recipes so you can enjoy too.  Who knows.  Maybe you and your friends will do a little Clean Eating Jump Start too!
